Looking for a delicious and healthy pancake day option? Look no further than these protein-packed pancakes! These pancakes are a great breakfast too but also a guilt-free indulgence on Shrove Tuesday! Packed with wholesome ingredients, these pancakes are not only high in protein, but also gluten-free and low in sugar. So let's get started and whip up a batch of these healthy protein pancakes!
Ingredients
1 banana
75g oats
3 large eggs
2 tbsp milk (dairy, soya, oat or nut milks all work)
1 tbsp baking powder
pinch of cinnamon
2 tbsp protein powder (whey, pea or whatever your preference)
coconut oil, low-cal cooking spray or a flavourless oil, for frying
Choice of toppings -such as peanut butter, maple syrup and berries or sliced banana to serve
Method
1) Blend the banana, oats, milk, eggs, baking powder, cinnamon and protein powder for a couple of minutes until smooth. Check there are no lumps of oats, if there are give it another whizz for a minute or so.
2) Heat a small drizzle of oil in your frying pan. We’ve found better results by doing one pancake at a time; pour or ladle the mixture into the centre of the pan. It should be roughly 1.5cm thick and just smaller than a side-plate.
3) Cook for 1 – 2 minutes until you see bubbles appear on the surface and the bottom side is golden. Gently flip and cook the other side, also for 1 – 2 minutes.
4) Ensure the mixture is cooked in the middle. When done remove from pan and serve with your choice of healthy toppings!
